Vanilla ice cream

Ingredients:

  •  Two and a half cups of sugar.

  •  Six cups of whole milk.

  •  One stick of fresh vanilla.

  •  Sixteen egg yolks.

  •  Two cups of fresh cream. 

Method of preparation

  • Mix the milk with the cream in a medium-sized metal pot, leave it to boil, then add the vanilla bean.

  •  Beat the egg yolks with the sugar in another bowl using a fork, stirring well until the mixture is completely mixed. 

  • Add a third of the amount of the milk and cream mixture to the egg yolk, and stir well using a hand whisk.

  •  Pour the egg mixture into the saucepan of milk and cream, then stir it at a low speed over a low heat until the mixture thickens a little.

  •  Remove the pot from the fire and filter it into a strainer with tiny holes.

  •  Pour the filtered mixture into a clean glass container.

  •  Put the mixture in the fridge until it cools completely.

  •  Put the cold mixture into the ice cream machine, observing the machine's instructions.

The ingredients

Method of preparation:

  •  Mix cream and full-fat milk in an iron pot, then add glucose, and leave the mixture until it boils over a low heat.

  •  Put the mastic in a medium-sized earthenware dish, add a teaspoon of sugar, and grind it with a mortar or in a spice grinder.

  •  Mix three tablespoons of sugar with Sahlab (a mixture of cream, milk and liquid sugar).

  •  Add the rest of the sugar to the sahlab saucepan and leave it on a low heat until it boils and caramelizes again.

  •  Add the crushed mastic with constant stirring until bubbles appear on the face and the mixture begins to stick.

  •  Transfer the mixture to another bowl and leave it to cool to room temperature, then put it in the fridge for at least twelve hours.

  •  Put the ice cream in the ice cream machine until it freezes and holds for about half an hour, after that the pistachios and cream are added, then immediately transferred to the freezer of the refrigerator, and left for at least six hours before eating it.

 French ice cream layer cake

  •  Preparation time 10 minutes 

  • Enough for 8 people 

Ingredients 

  • Three packages of fat-free sweetened condensed milk.

  •  Two cups of frozen strawberries.

  •  Two cups of frozen blueberries.

  •  Two cups of frozen guava.

 Method of preparation

  •  Pour sweetened condensed milk into the bowl of an electric mixer, then add the frozen strawberries.

  •  Run the mixer on high speed for two minutes, then stir the mixture using a flat rubber spatula; To prevent sticking to the sides of the mixer bowl, then restart the mixer for another two minutes.

  •  Pour the mixture into a tall glass container, and cover it with cling film. Place the bowl in the freezer for an hour, until the layer of ice cream freezes.

  •  Preparing the second and third layer of ice cream with the same steps as the first layer, where the guava ice cream is poured over the frozen strawberry ice cream layer, then placed in the freezer, then the third layer of blueberries is prepared in the same way.

 Ingredients:

  •  Half a cup of sweetened milk.

  • A cup of vanilla ice cream. 

  • Two cups of liquid cream.

 Chocolate sauce ingredients: 

  • 1 teaspoon liquid vanilla.

  •  One hundred and fifty grams of chopped chocolate.

  •  A cup of liquid cream.

  •  To decorate: chocolate chip cookies.

 Method of preparation 

  • Put the cream in a small saucepan, and leave it on a medium heat until it becomes hot.

  •  Add the chocolate pieces, stir them until they are melted, then add the vanilla, and set them aside. Remove the cream from the biscuit pieces, put the biscuits in the food processor, then run the mixer until the mixture becomes smooth.

  •  Put the cream in the mixer bowl, install the paddle attachment, and whip the cream until it becomes fluffy, then add the milk and vanilla, and mix the ingredients well. Add the biscuits, and stir the mixture well.

  •  Bring small Arabic coffee cups, lining them with nylon, leaving the nylon ends outside.

  •  Distribute two tablespoons of the biscuit mixture, make a cavity, then fill the cavity with ice cream, distribute a mixture of biscuits on top of it, press softly and then cover it with nylon paper.

  •  Put the cups in the freezer until the mixture becomes firm.

  •  Invert the ice cream onto a serving plate, decorate it with chocolate sauce and biscuit sticks, then serve.

 Banana and yogurt ice cream
